While you are normally already informed upfront in the meeting invite or a dedicated email, you will also receive clear notifications when joining the call that an interview is being recorded. The visual cue might depend on the actual video conferencing tool.

In the case of an interview via Google Meet, you will notice the presence of an additional participant in the room, aside from yourself and the interviewer. This participant is identified as the "Interview Assistant." This assistant will also provide a chat message stating, "We are recording this conversation to promote a fair and efficient hiring process. If you don't feel comfortable with this, simply type DELETE in this group chat."

If the meeting is happening via MS Teams or Zoom, it is less likely that an additional participant will join the room. There will be visual cues, such as a prominent red recording button, or you receive an audio message to ensure complete awareness of the recording process.

At any point in time, you can also simply inform the interviewer to stop the recording.
